This yummy recipe for vegan hemp burgers from the Hemp Farm chef incorporates hemp hearts, hemp protein and chickpeas to make four ‘vegalicious’ patties packed full of plant-based goodness.
Just pop these tasty patties into burger buns and add your favourite salad ingredients and sauces. You could even make the patties up in advance and freeze them to have on hand when you’re short on time as a cheaper and healthier alternative to takeaways.
Vegalicious Hemp Burger
Cook Time: 10 mins
Ingredients:
¼ cup Kiwi Hemp Seed Hearts
400 g Can of chickpeas and 40ml chickpea liquid from can (Aquafaba)
3 tbsp Pure Hemp Protein (or 2 tbsp protein powder & 1 tbsp plain flour)
1 tsp Cumin Seeds
1 Garlic Clove (finely chopped)
¼ Red Onion
1 tsp Coriander Powder
½ tsp Salt
½ tsp Pepper
Garnish & Buns:
2 tomatoes
½ red onion (reserved from the onion used in the patty)
½ head iceberg lettuce
4 bread buns
50g vegan butter
100ml of your favourite sauce
Plant-based mayonnaise
Directions:
Add the hemp seeds, chickpeas, hemp protein, cumin seeds, garlic, onion, coriander powder salt, and pepper to a bowl, and with a masher, mash to a paste.
Divide the mixture into 4, and using wet hands shape the mixture into 4 patties, place on a baking tray lined with baking paper, and lightly oiled.
Heat 40ml of vegetable oil in a large, non-stick frying pan, on medium-high heat. When the oil is hot, gently place the hemp burgers in the pan and press lightly with a spatula. Cook on each side for 5 to 10 minutes, turn with care and repeat for an extra 5 minutes until nicely golden on either side.
Prepare garnish sliced tomato, lettuce leaves and onion.
Slice the buns in half and spread the insides of the rolls with your favorite vegan butter. Remove the burgers from the pan and place the buttered buns down to toast for a minute while the burgers rest.
Once toasted, layer the buns with your favourite sauce, plant-based mayo, the hemp seed patty, onion, lettuce, tomato, and of course, your bun tops!
