Paleo Nut Butter & Banana Muffins

TOTAL TIME 30 mins
YIELDS 8 servings
Ingredients
3 large ripe bananas, mashed
¼ cup maple syrup or honey
⅓ cup coconut oil
2 eggs
1 tsp vanilla extract
2 tsp cinnamon
½ tsp sea salt
1 tsp baking soda
1 & 1/2 cups coconut flour
8 tbsp peanut butter or almond butter
Method:
Pre-heat oven to 180 degrees Celsius.
Add the bananas and first 4 wet ingredients into a bowl and mix together until combined.
Add the next 4 dry ingredients into the bowl and mix together until combined.
Fill 8 muffin cups up halfway with the mixture, add 1 tbsp of peanut butter into the middle of each muffin cup.
Next, add the remaining mixture on top of the peanut butter to fill the muffin cup.
If you feel fancy top each muffin with some dark chocolate (totally optional).
Bake in the oven for 20 minutes.
