eggless chickpea omelette

This recipe from The Vegan Society for a nutritious and tasty eggless omelette made with chickpea flour, herbs and spices is a great option for those missing their eggs on toast for breakfast due to the current supply issues. It’s especially good if you find yourself short on time in the mornings as you can prepare the dry mix in advance and keep it in a sealed container until you’re ready to make your omelette, then it’s as quick and easy as adding water and frying.

Eggless Chickpea Omelette

Prep Time: 5mins | Cook Time 5mins | Serves: 2

Ingredients:

1 cup chickpea flour

1 tbsp flaxseed (linseed) meal

1 tbsp nutritional yeast

1 tsp turmeric

1 tsp mix herbs

1/4 tsp baking soda

Pinch of black salt

Pepper to taste

Directions:

Mix the ingredients together in a bowl.

Add just over 1 cup of water. Give it a good whisk and voila, ready to fry into an omelette!

Note: You can often find black salt (which is pink) at Indian supermarkets. It gives food an amazingly eggy smell and taste!
