I think you’re going to enjoy this delish sugar free Banana Oat Breakfast Bake that’s packed full of nutrients. The combination of banana, oats, berries, and hemp seed hearts makes this dish chewy, soft, and creamy all at once.
Oats are among the healthiest grains on earth. They’re a great source of important vitamins, minerals, and antioxidants. They are also rich in a specific type of fiber called beta-glucan which is known to help lower levels of bad cholesterol.
We had a couple of slices for desert the other night with stewed lemon banana, apple sauce and coconut yoghurt, yum!
Banana Oatmeal Bake with Hemp Hearts
1 banana
1 cup oats
2 tablespoons hemp seed hearts
1/2 cup oat milk
1/2 tsp salt
1 tsp cinnamon
1 tbsp almond butter
Handful of raspberries, blueberries or blackberries
Chopped walnuts, coconut yoghurt and a drizzle of honey to serve
This is best made in a loaf tin. Heat the oven at 200 degrees celsius. Place the banana in the tin and mash. Combine the other ingredients (except for the berries) and add to the mashed banana. Mix well and add a little more oat milk if your mixture seems dry, then top with the berries of your choice.
Bake for 25 minutes.
Once done remove from oven, cut a couple of slices and place on a plate, top with coconut yoghurt, chopped walnuts and a drizzle of honey if you feel like a little bit of sweetener.
