I’ll definitely be keeping this recipe from LeaderBrand for a simple yet super flavoursome salad close at hand over the summer months.
The peppery flavour of the wild rocket and the homemade picked red onion is beautifully balanced with the sweetness of cherry tomatoes, refreshing cucumber and subtle nutty taste of creamy avocado to produce this delightful dish. And although this sounds pretty amazing as is, don’t forget to add the zesty lime and sweet chilli dressing to take your Wild Rocket Summer Salad to a whole new level of tastiness!

Wild Rocket Summer Salad with Zesty Lime and Chilli Dressing
Total time: 30 mins | Serving: 4 | Difficulty: Easy
Ingredients
1 bag LeaderBrand Wild Rocket
1 small red onion, halved and finely sliced
¼ cup white vinegar
1 tbsp caster sugar
¼ cup olive oil
2 limes (¼ cup lime juice + 1 tbsp zest)
¼ cup sweet chili sauce
Salt & pepper
1 large punnet coloured cherry tomatoes, halved
1 avocado, sliced
1 lebanese cucumber, peeled into ribbons with potato peeler
Directions
Pickle the onions first – in a small bowl toss the sliced red onion with the white vinegar and caster sugar, cover and set aside for at least 10-20 minutes, mixing occasionally.
In a jar combine the olive oil, lime juice and zest and sweet chilli sauce, shake well and season to taste.
When ready to serve, arrange the LeaderBrand Wild Rocket on a platter or serving plates and top with the halved cherry tomatoes, sliced avocado and peeled cucumber, drain the pickled onions and arrange on the salad then drizzle with the lime & chilli dressing.
