The combination of cinnamon, ginger and nutmeg in this dairy-free loaf compliment the subtle flavours of coconut yogurt and pear beautifully. This is such a lovely loaf to serve up when you have visitors as it not only tastes delicious but also looks lovely with the pear displayed on top.

Spelt is a good source of dietary fibre, protein, vitamins and minerals.
This grain is also more water-soluble than wheat, which makes it easier for the body to digest. Due to the many minerals and vitamins spelt contains, it can help regulate metabolism, increase circulation, improve the immune system, lower blood sugar, and reduce bad cholesterol levels.
Spiced Pear & Spelt Loaf
Ingredients:
2 cups Ceres Organics Spelt flour
1 cup coconut sugar
4 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 cup oil
1/2 cup almond milk (or other plant based milk)
1 tsp vanilla
6 Tbsp coconut yoghurt
1 large pear
Instructions:
Preheat the oven to 180C. Grease and line a loaf pan.
Sift all the dry ingredients together in a large bowl. In a seperate bowl, combine the oil, almond milk, vanilla and coconut yoghurt.
Pour the wet ingredients into the dry ingredients and mix well to combine.
Pour mixture into prepared loaf tin. Have the pear and remove the stalk if present. Push the pear into the mixture, cut side up.
Bake in the preheated oven for 30minutes until golden brown. check if cooked by inserting a skewer into the loaf, if it comes out clean then it’s ready.
