French toast has been a guilty pleasure of mine….until now! This recipe makes wonderful french toast that is golden on the outside and soft on the inside with a hint of vanilla and cinnamon. It’s delicious.
Best of all it is free from refined sugar, egg and dairy and it has a gluten free option, too.
When making your French toast make sure you use stale bread as fresh doesn’t soak up the dipping mixture as well. It’s also much nicer with crusty bread as opposed to regular white sliced bread. If your bread is fresh leave it out for a couple of hours so that it drys out before you dip.
Best Ever Eggless French Toasts
240 ml Organic unsweetened oat milk
130 g Organic firm tofu cut into cubes
1/4 tsp Ground cinnamon
3 Tbs Coconut Sugar
1/8 tsp Salt
2 tsp Vanilla extract
1 tsp Nutritional yeast
6 Slices crusty two day old white bread
Plant based spread to oil your pan
Blend all ingredients together until super smooth and creamy, pour into a shallow baking dish ready for dipping.
Get your bread and dip in mixture leave for 15 seconds a side to ensure each slice is well coated.
Heat spread in a heavy based frying pan over medium heat. Fry the bread slices until golden brown which takes about 3 minutes a side. Wipe your pan half way between each batch and then repeat the process.
Serve immediately, dust with icing sugar if desired and top with Raglan Lemon Coconut Yogurt, pure maple syrup and fresh berries.
Make this recipe gluten free by using gluten free bread.
