This recipe from my friend Anita has now been added to my list of family favourite cauliflower recipes! These divine morsels are crispy on the outside and oh so soft in the middle.
They make tasty finger food for a party, or a delicious light lunch for two with a green salad.
Ingredients
This recipe will make about 18 bites.
Cauliflower – cut into florets (I used half a large cauli, around 700g)
2 eggs
½ cup of breadcrumbs
2 Tbsp dried herbs of your choice (I used Italian Herbs)
2 cloves garlic, crushed
100g grated 3 cheese mix (Parmesan, Mozarella and Cheddar) – or just use whatever you have in the fridge
Salt and pepper
Method
Preheat oven to 180°C
Line a baking tray with baking paper
Steam the cauliflower until tender and allow too cool. Use an old (clean) tea towel to squeeze as much water out of the cauli as you can. Make sure you rinse or wash the tea towel the same day as it will smell nasty if you leave it any longer!
Add cauliflower to a mixing bowl with all other ingredients and season with salt and pepper. Mix together, then drop spoonsful (no bigger than a tablespoon or they’ll be too soft on the inside) onto the baking tray.
Bake for 20 minutes until golden brown and serve with your favourite dipping sauce or chutney. We used good old tomato relish, as well as peri peri mayo.
