old fashioned apricot square

If you are looking for a delicious old fashioned apricot square recipe you are in the right place. This naughty but nice slice is just so good, it has a totally delicious cream cheese topping and soft biscuit base. Yum!

The recipe uses chopped dried apricots and wine biscuits for the base and with a relatively high sugar content you probably shouldn’t eat them all at once.

No Bake Apricot Square

Ingredients for base:

1/2 tin (approx. 200g) condensed milk

1/2 cup brown sugar

135g butter

1 cup (175g) chopped dried apricots

2 Tbsp shredded coconut

1 250g packet wine biscuits

Ingredients for topping:

2 Tbsp butter, softened

¼ cup cream cheese, softened

1.5 cups icing sugar

A few drops of water if needed

Instructions:

Heat condensed milk, brown sugar, butter and chopped apricots gently until butter has melted.

Stir in the packet of finely crushed wine biscuits.

Press into a square container, i.e. a glass container with lid and allow to set in the fridge.

In a bowl beat the butter and cream cheese until creamy, add the icing sugar and beat again, add a few drops of warm water if needed.

Once the base is set spread over the icing and put back in the fridge to set.

Cut into small pieces. Will last in the fridge for a couple of weeks.
