This is absolutely delicious, fairly simple to make, is sweetened only with manuka honey – and it’s dairy free!
Ingredients:
3 bananas large, ripe, peeled and sliced
1/2 cup Natural, unsweetened Coconut Yogurt (at most supermarkets)
2 tsp vanilla extract
2 tbsp Earthbound Raw Manuka Honey
Freeze the sliced bananas on a tray lined with baking paper. They’ll need at least eight hours, so overnight is perfect. Mix the yogurt, honey, and vanilla together in a shallow container and also freeze.
The next day, take out the bananas and thaw for a couple of minutes (this will make it easier to blitz) then place in a food processor with the yogurt, vanilla, and honey and process until smooth.
Serve immediately or return to freezer until ready to serve … is even better with Kahlua poured over the top, or for a fun kids version sprinkle on some Crupples
