strawberry rose jam

This is another quick and easy recipe that’s great to keep on hand for strawberry season. You can adjust this recipe to use up a punnet of strawberries that don’t get eaten – don’t let them go to waste – whip up a jar full of jam.

You can also make single jars of jam if you don’t have enough strawberries for a big batch, or add a few raspberries or blackberries, we have so many of these growing in our berry garden.

If you are new to jam making you can make life a lot easier by buying a sugar which has added pectin in it to ensure a good set. I put lemon in this recipe as its natural pectin helps it to set.  But if your jam doesn’t set, you can always call it a conserve.

Strawberry Rose Jam

4 cups fresh strawberries, hulled and halved

2 cups granulated sugar

2 tbsp fresh lemon juice

1 tsp grated lemon zest (optional, for flavor boost)

2 tbsp rose water

Method

Place the strawberries in a large bowl. Mash them slightly with a fork or potato masher to release their juices. Alternatively, pulse them a few times in a food processor if you prefer a smoother jam.

Transfer the mashed strawberries to a large saucepan. Add the sugar, lemon juice, and lemon zest. Stir to combine.

Heat the mixture over medium-high heat, stirring occasionally until the sugar dissolves and the mixture starts to bubble.

Lower the heat to medium and let the mixture simmer, stirring frequently, for about 20-25 minutes. Skim off any foam that forms on the surface. To test if the jam is ready, drop a small amount on a chilled plate and run your finger through it—it should wrinkle and hold its shape.

Remove the pan from heat and stir in the rose water. Mix well to distribute the floral flavour.

Pour the hot jam into sterilized jars, leaving about 1/4-inch headspace. Seal tightly and allow to cool completely. If you plan to store it for longer, process the jars in a boiling water bath for 10 minutes.

Store in the refrigerator for up to 1 month, or in a cool, dark pantry for up to 1 year if properly canned.


This version balances the tang of the lemon, the sweetness of sugar, and the floral essence of rose water, making a versatile and aromatic jam!
