It’s that time of the year when courgettes are abundant – so much so that trying to keep up with new ways to eat them can be a challenge.

If you’re looking for a quick and flavourful way to enjoy courgettes, this spicy gochujang version from Leader Brand is a game changer.

Whether served as a side dish or a vibrant addition to a rice bowl, this easy recipe comes together in minutes.

All you have to do is lightly pan-sear the courgettes so that they’re perfectly tender whilst soaking up a rich sauce made with nutty sesame oil, spicy gochujang paste, and a touch of honey for balance.

The dish is finished with crispy shallots and fresh spring onions for an irresistible combination of crunch, spice and savoury.

Spicy Gochujang Courgettes with Crispy Shallots

Slice the courgette in half. Season with salt. 

Heat a large frying pan with 1 tbsp of oil to medium heat.  Place the courgettes into the pan skin side up. Cook on either side for 4-5 minutes still slightly soft but still crunchy.  

To make the sauce in a bowl combine the sesame oil, gochujang paste, honey, and rice wine vinegar. Mix to combine.  

Heat a small pan with 1 tbsp oil add in the garlic, sauté for 1 minute. Pour in the sauce ingredients cook out for 1 minute more ensuring to stirring often.  

To serve  

Layer the courgette up on a plate drizzling the sauce and fried shallots between layers. Garnish with sliced spring onion.
