It’s hard to believe that something this tasty can be so good for you! This recipe from holistic nutritionist Natalie Brady makes a totally scrumptious high protein breakfast which is a fantastic way to set you up for the day. It’s as simple as blending all the ingredients together and cooking in the fry pan for 5mins, and can easily be made dairy free by opting for coconut yoghurt. With the delicious combo of banana, almond butter and cacao this omelette is sure to be a hit with the whole family.

This combination may sound a little strange at first, but trust me, it’s delicious! This breakfast is high in protein which is exactly what your body needs to start the day. Higher protein breakfasts will also support stable blood sugar levels, reduce cravings and support weight balance.
This chocolate almond butter omelette is also easy to make and kid friendly too!
Chocolate Almond Butter Omelette
Prep Time: 5mins | Cook Time: 5mins | Serves: 1
Ingredients:
3 eggs
1 medium banana
1 tbsp raw cacao powder
1 tsp psyllium husk
1/2 tsp cinnamon
Pinch of sea salt
2 tbsp coconut or greek yoghurt
1 tbsp almond butter
1 tsp coconut oil
Method:
Mash 3/4 of the banana into a small bowl. Add the eggs, cacao powder, psyllium husk, cinnamon, salt and mix together until well combined (alternative is to add all these ingredients into a nutribullet and blend until smooth).
Melt coconut oil in a fry pan over medium heat. Pour in the egg mixture and cook for 3-4 minutes on one side, flip then cook for a further 1-2 minutes.
Transfer omelette onto a plate, add 1 tbsp yoghurt into the middle of the omelette and spread it around. Fold the omelette in half then top the omelette with the other 1 tbsp of yoghurt, almond butter, the remaining 1/4 of the banana sliced up and an extra pinch of cinnamon.
