Wick's White Bean Hummus

Wick Nixon from Wicked Wellbeing is passionate about making healthy eating easy, fun and delicious – this week’s recipe for her white bean hummus certainly ticks all of those boxes!

This hummus uses Cannellini Beans (you have a can of Cannellini Beans lurking in the back of our cupboard right?) which is a really easy and creamy alternative to chickpeas. With lemon juice as the natural preservative, it will last for 7-10 days in the fridge. And using all natural ingredients, it’s gluten and dairy free too!

Smooth and creamy this hummus recipe is essential for any cook, because then it can become the base for many other flavoured hummus’s too!

Cannellini Bean Hummus

Ingredients:

1 clove garlic

400gm can white cannellini beans, rinsed and drained

2 T tahini (sesame seed paste)

rind and juice of 1 large lemon

1 ½ t ground coriander

a pinch of salt

2 T olive oil

To make the homemade hummus, place all the ingredients in a food processor and pulse until smooth, scraping down the sides a couple of times as you go. Transfer into a serving bowl or container and store in the fridge. Serve with seedy crackers, vegetable sticks, as a spread in sandwiches or as part of a grazing platter. Will last for 7- 10 days in the fridge.

From here, you can add roasted carrot, garlic, beetroot, pumpkin or kumara to add flavour. You could throw in some fresh basil or coriander. Or go Italian style and add sun-dried tomatoes or olives… honesty, just experiment and find a flavour that you love. 

Or just keep it simple like this one which is often what I do. I love hummus to add as a spread to a sandwich (it takes a sandwich to the next level!), to add to a grazing platter for entertaining or just as a snack in the afternoon with seedy crackers or veggie sticks. Either way, if it’s in your fridge, it’s easier to make those healthier choices!
