Watermelon, Mint & Feta Salad

Watermelon, Mint & Feta Salad

Posted on October 28 2026

This super simple salad has summer written all over it! The refreshing sweetness of juicy watermelon, fresh mint and the salty creaminess of feta are perfect together.

I’ve made this salad before with lime juice, but this year I felt like trying something a little different, so I swapped it for Raspberry Balsamic Vinegar. The result was even better than I expected. It adds a lovely fruity tang that complements the watermelon beautifully, bringing all the flavours together.

This salad will be a great addition to summer barbecues, shared lunches or whenever you feel like something light and refreshing.

Watermelon, Mint & Feta Salad

½ medium watermelon, chilled

1 cucumber

½ cup fresh mint, chopped

⅓ cup extra virgin olive oil

3 tbsp raspberry balsamic vinegar

½ block feta, crumbled

Zest of 1 small lime, to taste

1 tbsp fresh lime juice

Method

Cut the watermelon and cucumber into bite-sized cubes.

In a small bowl, combine the olive oil, raspberry balsamic vinegar, lime zest and lime juice.

Place the watermelon and cucumber in a large serving bowl and drizzle over the dressing.

Add the crumbled feta and chopped mint, then toss very gently to combine.

Serve immediately while the watermelon is lovely and chilled.
