These delicious Vegan Protein Pancakes are gluten-free, nut-free, and completely free from refined sugar. Naturally sweetened with dates and apple, they’re full of protein, fibre, and healthy omegas.

Light, fluffy, and satisfying, they make the perfect weekend breakfast (or any day when you want something a little special). Whip up a batch, top with your favourite fruit or a drizzle of nut butter, and enjoy a nourishing, guilt-free treat.

Vegan Protein Pancakes

1 Apple

1 cup Plant Milk

2 Medjool dates

⅓ cup Hemp Hearts

1 cup Buckwheat Flour

3 tbsp Chickpea Flour

1 tsp Baking Powder

½ tsp Cinnamon

1 pinch Salt

¼ cup Hemp Seed Oil

Directions

Prepare the ingredients. Cut an apple into quarters and remove the core.

In a blender, place: apple, plant milk, dates, hemp hearts, buckwheat flour, chickpea flour, baking powder, cinnamon, salt, and hemp oil. Blend until smooth – approx.1 minute. Set aside for 5 minutes to let the mixture thicken.

Heat an oiled large frying pan to medium, pour the mixture (approx. ¼ cup per pancake) and fry the pancakes until golden, approx. 2 minutes, flip and fry for 2 more minutes. Repeat with the remaining mixture.

Serve the pancakes topped with your favourite fruit and compote/jam/maple syrup.
