Nat's Healthier Chocolate Raspberry Brownie

Do you love chocolate brownies but would like a healthier recipe? This week we have an inventive, delicious, recipe from my favourite holistic nutritionist, Natalie Brady

This brownie is rich and chocolatey, slightly gooey in the centre, and balanced with a touch of tartness from the raspberries.

And here’s the best part - it’s made with black beans. Yes, really! Don’t be put off by the beans - they’re what give this brownie its amazing fudgy texture while adding protein, fibre, and nutrients. It’s naturally gluten-free and low in refined sugar too.

This is the kind of treat that feels indulgent but leaves you feeling great afterwards. It's perfect as an afternoon pick-me-up, a nourishing dessert, or even something to bring along to a gathering.

Nat's Healthier Chocolate Raspberry Brownie 

 100 g dark chocolate (70-85%)
  cup coconut oil (or butter)
 400 g can organic black beans
 ¼ cup maple syrup
 2 eggs
 1 tsp baking powder
 Pinch of sea salt
 1 cup raspberries (fresh or frozen - if frozen make sure they are defrosted)


Method

Preheat oven to 170 degrees. Line a square ovenproof dish or cake tin with baking paper.

In a small saucepan melt chocolate, coconut oil, maple syrup over low heat, still until combined. Allow to cool slightly.

Drain and rinse the black beans. Into a food processor add black beans, eggs, baking powder, salt and chocolate mixture. Blend until smooth and well combined.

Spoon mixture into prepared ovenproof dish. Scatter raspberries on top of the mixture. Pop the dish into the oven for 20-25. (Check at 20 minutes, I like mine extra gooey so I find 20 minutes is enough).

Once ready allow it to cool for a few minutes, then pop it in the fridge to set for 10-20 minutes OR enjoy immediately as I do, I can't resist!
