Mana's Lemon Tahini Dressing

Keep this lemon tahini dressing on hand in the fridge, and you’ll eat more salads than you ever have before! This simple, creamy, and flavour packed dressing is one of those recipes that once you make it, you’ll find yourself using it on just about everything.

It’s absolutely delicious ... it pairs beautifully with potato salad,  is fantastic with lettuce, spinach or kale, and wonderful with roasted cauliflower, pomegranate, beetroot, or butternut squash salads.

Not in the mood for salad? No problem. There are plenty of other ways to enjoy this versatile dressing!

Drizzle it over roasted vegetables like Brussels sprouts, butternut squash, cauliflower, broccoli, tomatoes, or beets. It’s also wonderful over grilled eggplant, zucchini, or a mix of summer vegetables straight off the barbecue.

Spoon it over falafel or a chickpea shawarma wrap for a deliciously creamy touch.

Or add it to a nourishing bowl — try it with quinoa, sweet potato, and roasted chickpeas, or make your own combination with your favourite veggies, grains, and proteins. It goes beautifully with baked tofu, lentils, or brown rice.

Mana's Lemon Tahini Dressing

 
4 Tbsp tahini – This makes up the creamy base. For best results, use smooth, runny tahini (not the dry, stiff kind from the bottom of the jar). Two of the best are from Ceres and Chantal’s.
1 fresh lemon, squeezed – Adds brightness and tang.
1 Tbsp sesame oil – Enhances the rich, nutty flavour.
Garlic to taste – Adds sharp depth.
Maple syrup to taste – Balances the sharpness of the lemon and garlic.
1 Tbsp extra-virgin olive oil – Adds smoothness and richness.
Sea salt to taste – Brings all the flavours together.

Instructions

Add all the ingredients to a small bowl along with 3 tablespoons of water and whisk to combine.

The tahini will start to thicken as you mix — don’t worry, this is completely normal. Keep whisking until the dressing becomes smooth and creamy.

If it’s too thick, add a little more water (½ tablespoon at a time) until it reaches your desired consistency.

Taste and adjust with more lemon juice, salt, maple syrup, or sesame oil as needed.

Serve immediately or store in an airtight jar in the fridge for up to a week — just give it a good stir before using.
