It is broccoli season, and this is my favourite recipe to use this time of year! It has a hint of freshness to keep us going until all the summer produce fills our plates. It is a must-save recipe because it is super nutrient-dense and high in Vitamin C, K, E, zinc, and potassium, just to name a few!

Super Charged Smoky Broccoli Salad

Ingredients:

2-3 Broccoli heads
½ finely diced red onion
1/3 cup of raisins

Dressing:
3 tablespoons mayonnaise (I make my own, or when short on time the best store-bought one is made by @ceresorganics )
1½ tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon maple syrup or honey (we love @settlers_honey )
1 garlic clove, minced
Salt and pepper to taste

Smoky Topping:
1-2 tablespoons olive oil
½ cup almonds
½ cup sunflower seeds
1 tablespoon tamari soy sauce
½ teaspoon maple syrup
¼ teaspoon smoked paprika

How to:

Roughly chop the broccoli heads into small pieces and add them to a large bowl along with the finely diced red onion.

To make the dressing, combine mayonnaise, apple cider vinegar, Dijon mustard, maple syrup or honey (if using), minced garlic clove, salt, and pepper in a separate bowl. Set aside.

For the smoky topping, heat olive oil in a pan over low heat. Add almonds, sunflower seeds, tamari soy sauce, maple syrup, and smoked paprika. Toss constantly until the seeds and nuts start to lightly brown, then remove from heat. Let it cool, and then add it to the broccoli along with the dressing.

Mix to combine.
