These salted vinegar crispy potatoes are absolutely scrumptious! The tangy kick from the vinegar combined with sea salt and rosemary take them to a whole new level of yumminess.

The vinegar acts as a seasoning that penetrates the potatoes during the boiling and roasting process. Vinegar adds a tangy, slightly acidic note that balances the richness of the potatoes, while salt and rosemary enhances the natural flavours. The combination of these ingredients creates a well-rounded and savoury taste.

Boiling the potatoes briefly in water with vinegar helps to soften the outer layer of the potatoes. This process breaks down the starches on the surface, resulting in a slightly creamier texture inside and a crispier exterior when roasted.

Salted Vinegar Crispy Potatoes

1 kg potatoes (agria are perfect)
2 tablespoons malt vinegar
3 tablespoons vegetable oil
1 teaspoon sea salt and 1 teaspoon chopped rosemary
1/2 teaspoon black pepper

Optional: additional sea salt and malt vinegar for sprinkling once cooked

Instructions:

Preheat your oven to 220°C.

Wash the potatoes thoroughly and cut them into evenly sized wedges or cubes, about 4 cm in size. Leave the skin on for added texture and flavour.

In a large pot, add the potatoes and cover them with water. Pour in the malt vinegar and bring the pot to a boil over high heat. Allow the potatoes to boil for about 5 minutes. This step helps to soften the outer layer of the potatoes and prepares them for crispiness.

Drain the potatoes and let them sit in the colander for a few minutes to dry out.

Transfer the potatoes to a large bowl. Drizzle the vegetable oil over the potatoes ensuring all sides are covered and sprinkle with sea salt and black pepper. Toss gently to ensure all the potatoes are coated evenly.

Place the seasoned potatoes on a baking sheet or roasting pan, spreading them out in a single layer.

Roast the potatoes in the preheated oven for approximately 30-35 minutes, or until they turn golden brown and crispy. Flip the potatoes halfway through the cooking time to ensure even browning on all sides.

Once the potatoes are cooked to your desired crispiness, remove them from the oven. If desired, sprinkle some additional sea salt and dash of vinegar over the crispy potatoes for an extra burst of flavour.

Serve immediately as a side dish or a tasty snack.
