If you love a piece of toast topped with honey and are feeling creative this week, try this beautiful, delicately flavoured recipe from Wendyl’s book ‘A Natural Year‘. My family in New Plymouth sent me up this delicious jar ‘Love Ya’ honey from their bee hives and for something a bit special I added the rose petals which gave it a delicate rose flavour.
Enjoy as a treat for yourself, or as a lovely and unique gift.
I use a small Agee jar for this. Make sure it is clean, then fill it with dry rose petals but do not cram them in (you can dry rose petals by laying them out on a paper towel in a warm spot inside).
Half fill the jar with honey and, using a knife, stir the honey and rose petals together.
After they are well combined, top up the jar with more honey and stir again.
Put on the lid.
Keep the jar on the windowsill and turn it upside down a couple of times a day.
After three days it will be ready petals and all.
