Yum! Feijoa season is here once again. I love eating feijoas straight off the tree, scooping them out and enjoying the tangy goodness. But what to do with all those skins?
Did you know that the skins of feijoas have a film of naturally occurring yeast which helps them to ferment? Save up all the skins, trim the sticky-out end off and pop them in a large jar, cover with cold filtered water and sugar. Leave the jar in the sun or in the hot water cupboard for a couple of days and voila, you’ll have a refreshing fizzy drink.
You can save your scooped-out feijoa skins in the fridge in a one litre jar covered with water until you have filled it up, leave space around the feijoas, you don’t have to squash them down.
How To Make Feijoa Fizz
1 Litre jar with a well sealing lid
Feijoa skins
3 tbsp sugar
Filtered water
Once your jar is full of feijoas add the sugar and stir well. Add more water if necessary to make sure your skins are covered. Tightly seal the lid and place your jar in the sun or in the hot water cupboard and leave for at least two days, or until you have a slightly fizzy drink.
When you are happy with the fizzy flavour strain and bottle. It is best served chilled.
