Worcestershire sauce, homemade, in bowl

A very popular condiment indeed, Worcestershire sauce is a fermented liquid that is traditionally made with anchovies so it is not totally plant based. The other ingredients in regular commercial Worcestershire are; vinegar, onions, molasses, high-fructose corn syrup, salt, garlic, tamarind, cloves, chilli powder, water and “natural flavouring”.

This vegan version is one of Wendyl’s recipes, having only seven ingredients (and no anchovies). There is sugar in the recipe – but no high-fructose corn syrup!

Homemade Worcestershire Sauce

5 cups malt vinegar

800g golden syrup

2 teaspoons salt

3 cm piece peeled ginger, finely chopped

4 cloves garlic, finely chopped

2 tablespoons ground cloves

1 teaspoon cayenne pepper

Combine all the ingredients in a saucepan. Bring to the boil and cook gently uncovered for 20 minutes. Cover and let stand overnight. Next day, strain and bottle.
