How delicious do these vibrant fruit ice blocks look. These are such a great way to get your daily serving of fruit and they’ll help you to keep cool at the same time. Plus the kids will love them.
I’ve done a little research and found a selection of recipes for you to choose from, one site has 60! Fruit ice blocks can be made in advance and kept in the freezer for a couple of weeks.
Homemade Berry Ice Blocks
1/2 punnet strawberries
1 punnet blueberries
3 bananas
2 cups coconut milk
Blend well and pop into reusable ice cream moulds.
Place into the freezer for about 4 hours until frozen. Makes 6 ice blocks.
Kiwifruit Method
12 Ripe Kiwi Fruit
500ml Low Sugar Clear Apple Juice
2 teaspoons Coconut Sugar if necessary
Peel and slice thick slices of kiwi fruit so that you have one slice per block.
Put one slice into each mould and blend the remaining fruit in a food processor with the apple juice and sugar if using.
Fill up your moulds moulds and place in the freezer for at least four hours or until frozen.
Other Ideas
For a layered effect use different fruits and blend with banana separately then pour into moulds one after the other.
Here are some ideas for fruits to use:
Berries- strawberries, blueberries, raspberries, blackberries
Tropical fruits- mango, pineapple
Stone fruit- plums, peaches, nectarines, cherries
You could also replace these fruits with canned fruits, in which case you can skip the cooking and blend with banana after draining from the can.
