This week we are delighted to have a new food blogger, Narelle Stewart, who creates delicious, innovative dishes with a focus on raw food.

We’re loving her plant-rich raw twist on potato and gravy. The combination of broccoli, Brazil nuts and organic hemp hearts topped with miso gravy will stimulate your taste buds and your immune system, packed full of fibre, protein, essential fatty acids, vitamins and minerals this is one healthy side dish or a meal on it’s own.

Hemp & Broccoli-Nut Mash with Miso Gravy

2 1/2 cups roughly chopped broccoli

1/4 cup organic hulled hemp hearts

1 cup Brazil nuts

1 clove garlic

Pinch ground black pepper

1 tsp sea salt

Miso Gravy:

¼ cup miso paste

2 Tbsp chopped dates

1 Tbsp apple cider vinegar

1/3 cup olive oil

½ clove garlic chopped

Method:

Put nuts, garlic, salt & pepper into food processor and blitz to fine crumb.

Empty into a bowl and set aside.

Add broccoli to food processor, blitz while slowly adding nut mix back in.

To make the gravy:

Put all these ingredients into a blender and blitz until smooth,

Tip: To help make the dates a little softer if needed I add all the ingredients together and let sit while I make the mash.

Alternatively you can pre-make some date paste by putting just enough warm water to cover some chopped dates when pressed down, let sit for approx. half hour, you can make extra and keep in a container in the fridge ready to go to add as a sweetener to many dishes.
