fennel and orange salad

This delicious fennel and orange salad is super easy to make – it’s ready in under 5 minutes and the combination of crunchy crisp fennel and sweet sliced orange topped off with mint and pomegranate vinaigrette make it the perfect festive side dish for Christmas Day.

Fennel is one of my favourite vegetables, I love the subtle liquorice flavour that goes so well with the ingredients in this dish. Often referred to as an herb, fennel is actually a member of the carrot family and grows best during autumn and winter, but you can still find it growing during spring and early summer if it’s not too hot in your area. My local vegetable store still has plenty of fennel available.

Fennel And Orange Salad

2 bulbs of fennel

1 orange peeled

a few springs of fresh mint

pomegranate vinegar

extra virgin olive oil

sea salt and pepper

Method

Using a speed peeler or mandolin, shave the fennel and place in a bowl, if you don’t have either you can thinly slice with a knife. Slice the orange removing the core.

Pick the mint leaves, leave whole or chop then combine the fennel and orange, add a few splashes of pomegranate vinegar and extra virgin olive oil, season with sea salt and black pepper.

This salad is also fantastic served over rocket. Keep any extra vinaigrette to use on other salads, it has a lovely flavour.
