There’s nothing quite like a freshly baked loaf straight from the oven with a cuppa on a cool morning. This lovely recipe for a vegan fruit loaf is from Fat Sparrow, a super cute vegan porch takeaway coffee stop on Albany Highway in Auckland.
Grab a blessed coffee and yummy fresh bagel to takeaway, or take a moment for yourself and enjoy them while sitting on the bench seat in their lovely little garden.

Fat Sparrow Date & Apricot Loaf
Ingredients:
3/4 cup sugar
1 cup water
1 cup dates
1/2 cup apricots
1 big tablespoon of golden syrup
2 oz butter or 3 tablespoons vegan butter of your choice – I use nuttlex
Boil to soften these ingredients, then add:
1 tsp baking soda
I tsp vanilla essence
2 cups self raising flour or plain flour with a tsp of baking powder added
pinch of salt.
Mix quickly and put into a loaf tin and bake at 180 for approx. 30-40 mins, I use the knitting needle test to see if its cooked properly.
