Eggless French Toast

An upside of having to find different ways to cook without an ingredient that you’ve been used to having on hand is that you discover a variety of new and delicious food combinations. When you start exploring foods that you can use as substitutes for eggs there are just so many creative options, such as this vegan french toast recipe from The Messy Cheffy (aka Ali Daly) which uses a combination of banana, plant-based milk and maple syrup.

Just soak up the smoothie-like blend into the bread, fry, and serve with your favourite fruit and yoghurt toppings – yum! Once you’ve tried this variation there’s a good chance you won’t go back to making french toast any other way!

French toast is the perfect weekend brunch treat. This recipe is super easy with little or no effort required.

Ingredients:

3 slices of sour dough bread

1/2 banana

100ml plant milk of your choice – I use almond

1 teaspoon maple syrup

pinch of cinnamon

A few drops of vanilla

2 tablespoons coconut oil

Instructions:

Set the bread aside. Place all the remaining ingredients into a blender and blitz until smooth. The mixture should be of smoothie consistency. Transfer the mixture into a wide bowl.

Prepare the bread by slicing into medium thickness slices. Place the bread into the mixture ensuring to cover both sides in the French toast mix.

Heat a large frying pan on medium heat with non fragrant oil (olive oil Is not suitable for this dish as it’s too fragrant) – I used coconut oil. As soon as the oil is hot pace the bread into the pan. Cook the bread on either side until golden brown.

Best served with some delicious caramelised banana, blueberry compote and a good dollop of coconut yogurt.
