Fluffy Lemon Passionfruit Scones: The Ultimate Plant-Based Delight with a Refreshing Twist!

I’ve created the fluffiest, lightest, and most delectable plant-based scones you’ll ever taste, inspired by the timeless classic – lemonade scones. What makes these scones truly exceptional is the secret ingredient: Remedy Passionfruit Sodaly. This all-natural, guilt-free soft drink is free of any red flags, providing a unique and refreshing twist to your scone experience.

Lemon Passionfruit Scones

Ingredients:

4 cups self-raising flour

¼ cup sugar

Pinch of salt

Juice of 1/2 a lemon

The rind of a lemon

250ml soya cream (or substitute with coconut cream)

250ml Remedy Passionfruit Sodaly

Method:

Preheat your oven to 220 degrees fan bake and line a tray with baking paper.

Sift all the dry ingredients into a large bowl, and mix through the liquids until everything is well combined.

Place the mixture on a flour-sprinkled surface, and shape it into 8 round balls.

Carefully place these on a baking paper-lined tray and bake for 20 minutes.

Serve your scones with plant-based butter, nut butter, or your favorite jam!
