Feijoa season is upon us, and if you’re lucky enough to have a good supply then you’ll love this healthy, easy and delicious ice cream recipe from Wick at Wicked Wellbeing. It’s made with natural ingredients, sweetened with only fruit and vanilla essence and uses coconut cream and yoghurt making it both dairy and gluten free. Yum!
This feijoa ice cream is absolutely divine! It’s refreshing, uses only natural sugars, is gluten-free, dairy-free, nut-free and egg-free so it’s perfect for anyone with allergies. It’s a one dish wonder and you just throw everything into the food processor, made in 5 minutes. It’s the perfect guilt free dessert!
If you don’t have feijoas, swap them out with some frozen blueberries, strawberries or other seasonal fruit that you have on hand or in the freezer.
Feijoa Ice Cream
Prep Time: 5mins | Serves: 2 cups
Ingredients:
1 c feijoa pulp, frozen
1 banana, frozen
¼ c coconut cream
¼ c coconut yoghurt or natural yoghurt
½ t vanilla powder or 1 t vanilla essence
rind of one lime
Instructions:
To make the feijoa ice cream, allow the feijoa and banana to defrost slightly on the bench before making (about 10-15 minutes). Break the banana up into small chunks.
Place the feijoa, banana, coconut cream, yoghurt, vanilla and lime rind into a food processor and process until smooth. Serve immediately. Freeze any left over mixture into ice cream moulds or a small container. Enjoy!
