Melly's Crispy Carrots

Yum! These Crispy Carrots on Cashew Cream from Melly Rose are a perfect blend of vibrant flavours and contrasting textures. The carrot fries are roasted to golden perfection, they go perfectly with the cashew cream which is infused with basil and garlic.

To make it even better serve with a scattering of toasted pine nuts, sweet dates, and fresh basil. This recipe offers a little bit of everything: crunch, creaminess, and a touch of natural sweetness.

Whether served as an appetizer, a side dish, or even a light meal, this finger-licking good dish is sure to impress and delight.

Crispy Carrots on Cashew Cream

Ingredients:

For the Carrots

660g carrots, trimmed into fries

3 tbsp olive oil

1 tbsp cornstarch

1 tsp oregano

1/2 tsp cumin

1/2 tsp garlic powder (or garlic salt)

1 tsp paprika

Good pinch of salt

For the Cashew Cream

3/4 cup raw cashews (soaked if needed)

1/2 cup fresh basil leaves

6 tbsp boiled water

1 tbsp lemon juice

1 clove garlic, minced

1 tsp honey

Pinch of salt and pepper

Topping Options

Toasted pine nuts

Fresh basil, chopped

Dates, chopped

Method:

Preheat your oven to 180°C (350°F).

In a large bowl, combine the olive oil, cornstarch, oregano, cumin, garlic powder, paprika, and salt. Toss the carrot fries in this mixture until evenly coated.

Arrange the coated carrots on a baking sheet in a single layer. Roast in the preheated oven for 35–40 minutes, turning halfway through, until they are golden and crispy.

While the carrots are baking, prepare the cashew cream. Combine the cashews, basil, boiled water, lemon juice, garlic, honey, salt, and pepper in a blender or food processor. Blend until smooth and creamy. Adjust the consistency with a little extra water if needed.

To assemble, spread the cashew cream generously onto a serving plate. Layer the crispy roasted carrots on top.

Finish with a sprinkling of toasted pine nuts, chopped fresh basil, and sweet chopped dates.

Serve immediately and enjoy every delicious, finger-licking bite!
