Corn, Cauliflower & Haloumi Spiced Fritters

Combining low-cost, basic ingredients – many of which you may already have in your fridge/freezer – inspiring holistic nutritionist and health coach Natalie Brady has created this tasty and nutritious vegetarian fritter recipe for us to enjoy.

I was challenged by Countdown to create an easy and affordable recipe using 5x key products from their Great Price range and decided to create these delicious Corn, Cauliflower & Haloumi Spiced Fritters. This is a perfect lunch or dinner option to warm you up in winter.

During the colder months I notice things get more expensive which is why shopping the Great Price range at Countdown is such a great option to help stick to the weekly budget. Not only are these fritters wallet friendly, they are also a good source of fibre and healthy fats – yum!

Ingredients:

2 cups Countdown’s frozen cauliflower florets

1 cup Countdown’s frozen corn kernels

1/2 180g block of Countdown’s haloumi cheese, grated

½ tsp Countdown’s paprika

½ tsp Countdown’s crushed chilli

2 spring onion, thinly chopped

½ cup gluten free flour (option to swap for wholemeal flour)

½ tsp sea salt

1 egg, whisked

Olive oil for cooking

2 cups of leafy greens (rocket, mesclun, spinach)

Serving options: relish, avocado, hummus

Method:

Boil cauliflower and corn in a saucepan for 3-4 minutes until cooked through, drain well. Whist in the colander press down hard on the veggies with a paper towel, to drain excess water.

On a chopping board finely chop cauliflower florets.

Add chopped cauliflower, spring onions, corn, flour, haloumi, paprika, chilli, salt into a large bowl, stir to combine. Add the whisked egg into the bowl and stir again to combine.

Add olive oil into a large fry pan over medium-heat. Make 1/2 cup of the mixture into medium sized balls and then press flat into plan (makes 6 fritters).

Cook each side for 3-5 minutes until nicely browned.

Add onto a plate with leafy greens and serve with your desired topping (relish, avocado, hummus) for a healthy light meal.
