Moroccan Cauliflower Cheese Bake

There’s something timeless and comforting about a bubbling dish of cauliflower cheese pulled straight from the oven, golden on top and irresistibly creamy underneath.

This version is one of my favourites! The yummy cheesy sauce along with the savoury tang of Dijon mustard, nutritional yeast, and a warm hint of Moroccan spice are just perfect.

Moroccan Cauliflower Cheese Bake

1 cauliflower, cut into large florets

2 tablespoons plain flour

60g butter

2½ cups milk

1 tablespoon Dijon mustard

2 cups grated cheese (reserve ½ cup for topping)

2 tablespoons nutritional yeast

1–2 teaspoons Moroccan seasoning (adjust to taste)

Salt and pepper, to taste

Method:

Preheat oven to 200°C (180°C fan-forced). Grease a medium ovenproof baking dish.

Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 3–4 minutes, until just tender. Drain well and spread evenly in the prepared baking dish.

In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook, stirring constantly, for about 2 minutes to form a roux.

Gradually whisk in the milk, ensuring there are no lumps. Bring to a gentle boil, then reduce heat and simmer for 3–4 minutes until thickened.

Stir in the Dijon mustard, 1½ cups of the cheese, nutritional yeast, and Moroccan seasoning. Mix until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.

Pour the cheese sauce evenly over the cauliflower in the baking dish. Sprinkle the remaining ½ cup of cheese over the top.

Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbling.

Allow to rest for a few minutes before serving.
