These baskets are soft and chewy with just the right amount of crunch on the edges. You can enjoy them straight from the fridge with a dollop of yoghurt and seasonal fruit, or turn them into a decadent treat by adding dark chocolate, coconut yoghurt, or a drizzle of nut butter.
Bake a batch on Sunday and have a easy grab-and-go option ready for the week ahead. No refined sugar, no fuss, and plenty of goodness in every bite.
Hemp & Oat Breakfast Baskets
Makes 9 baskets
Ingredients
2 ripe bananas, mashed
1 cup rolled oats
½ cup The Hemp Farm hemp hearts
1 tablespoon melted coconut oil
1 tablespoon pure maple syrup
1 teaspoon ground cinnamon
½ teaspoon vanilla essence
⅓ cup raisins
A pinch of salt
Yoghurt, nut butter, chocolate and fruit of your choice for topping
Method
Preheat your oven to 180°C (fan bake).
In a medium bowl, mash the bananas until smooth. Add the melted coconut oil, maple syrup, vanilla essence, cinnamon, and salt. Mix well to combine.
Stir in the oats, hemp hearts, and raisins until the mixture is evenly combined.
Spoon the mixture into a greased or lined muffin tin, pressing it down with the back of a spoon or your fingers to form a basket shape.
Bake for around 15 minutes, or until golden and set.
Allow them to cool in the tin for about 10 minutes before carefully removing and letting them cool completely on a wire rack.
Once cool, fill with your favourite yoghurt and top with fresh fruit, granola, or a drizzle of melted chocolate.
Storage Tip
Store the plain baskets in an airtight container in the fridge for up to 5 days. You can also freeze them and simply defrost as needed. Fill just before serving for the best texture.
