Avocado Pistachio Fudge

This week’s recipe is from Wick at Wicked Wellbeing who helps women 40+ get their energy, weight and cravings back under control through fasting and lifestyle strategies.

This avocado pistachio fudge is her fave at the moment, especially with avocados so abundant – it's full of healthy fats with just a touch of sweetness, so just one piece is perfect!

Avocado Pistachio Fudge

Prep: 5 minutes | Freeze: 2 hours | Makes: about 15 pieces

Ingredients

½ cup avocado

1 cup tahini

2 Tbsp pure maple syrup

2 Tbsp coconut oil, melted

¼ to ⅓ cup pistachios, chopped

¼ cup 70% dark chocolate chips (I use sugar-free)

2 Tbsp desiccated coconut

½ tsp vanilla powder or 1 tsp vanilla essence

Pinch of salt

Method

Use a silicone loaf tin, or grease a small loaf tin and line it with baking paper.

Mash the avocado until smooth.

Add the rest of the ingredients and stir until well combined.

Spread the mixture evenly in the tin.

Freeze for 2 hours or until set, then cut into squares. Keep them in the freezer.

Thermomix: Blend the avocado for 5 sec on speed 7. Scrape down the sides. Add everything except the pistachios and chocolate, then mix for 10 sec on speed 4. Add the pistachios and chocolate and mix for 5 sec, reverse, speed 3. Follow instructions above.
