Asparagus, Broccoli, Feta & Almond Salad

Lightly sautéed asparagus and broccoli are tossed with tender spinach, creamy feta, and crunchy toasted almonds — a perfect side dish or a delicious lunch.

Asparagus, Broccoli & Almond Salad
Ingredients
1 LeaderBrand Broccoli
1 bunch LeaderBrand Asparagus
½ bag LeaderBrand Spinach
15g butter
2 cloves garlic, minced
½ fresh chilli, thinly sliced
1 lemon
100g feta cheese, crumbled
3 tbsp toasted almonds
Salt and pepper, to taste
Method
Snap off the woody ends of the asparagus and cut the broccoli into small florets. Heat a large frying pan over medium heat and add the butter. Once the butter has melted, stir through the garlic and chilli, cooking gently until softened — just be sure not to let them brown.
Add the broccoli and asparagus to the pan and sauté for about four minutes, until just tender but still bright green. Squeeze in the juice of half a lemon and season well with salt and pepper, then remove the pan from the heat.
Place the spinach into a large serving bowl and tip the warm vegetables over the top. Crumble in the feta, scatter over the toasted almonds, and gently toss everything together until just combined.
Enjoy this fresh, flavour-packed dish warm or at room temperature.
