Avocado, egg & Edamame on Toast

This easy lunch idea takes avo on toast to a whole new level! In addition to the beneficial fats you’ll get from the avocado and healthy carbohydrates from the wholegrain bread, you’ll get a protein boost from the eggs and edamame beans to help keep your energy levels up throughout the afternoon. Edamame beans are also a great source of many other nutrients and antioxidants. Swap out the toast for wholegrain wraps or rice wafers if you prefer.

Avocado, Egg & Edamame Beans on Grainy Toast

Prep time: 5 minutes | Serves: 2-3 people

This egg, avocado, and edamame bean combination is the easiest, quickest & tastiest lunch concoction possible. The great combination of healthy fats, protein and slow release carbohydrates will keep you sustained for hours.

Ingredients

2 hard boiled eggs

1 avocado

½ c edamame beans, blanched in boiling water for 5 minutes, drained

a small handful of fresh coriander, finely chopped

juice from ½ lemon (or more if desired)

a good grinding of salt and pepper

wholegrain bread/rice wafers or a wholegrain wrap

Instructions

Mash the avocado and egg until evenly mixed. 

Add the rest of the ingredients. 

Toast the grainy bread and spread the mixture over the top. Finish off with some extra coriander leaves. That’s it, it’s so simple! 

You could double the mixture and keep half in the fridge for the next day in an airtight container as the lemon juice is a natural preservative – just make sure you use a good squeeze of lemon juice.
