This is the first of the eggless recipes to be published, thanks to Ann Kidd for sending it through along with several more that also sound delicious. Grant really loved this one, he’s got a serious sweet tooth and this slice certainly hit the spot.

Ann’s recipe is super easy to make, cream butter and sugar, add the dry ingredients and golden syrup, combine and push into a tin, baking time is only 20 minutes and you ice it when warm, which made eating it that much faster … no one could wait for it to cool down!

Ann’s Eggless Fudge Slice

225g Butter

1 Tbs Golden Syrup

2 Cups Flour (I used half spelt half regular)

1 Cup Sugar (I used brown sugar)

1/4 tsp Salt

1 Cup Shredded coconut

2 Tbs Cocoa

2 tsp Baking powder

Cream the butter and sugar, add dry ingredients and Golden Syrup, combine well.

Press well into a tin, the one I used was 240cm by 340cm which was a bit large 250cm by 250cm would be better, cook for 20 minutes in a moderate oven.

Take out and let cook, ice when warm with chocolate icing.
