This recipe from Wendyl Nissen uses the sweetness from medjool dates and 70% cocoa dark chocolate as the sweetener.

The nutrition of the dates, almonds and coconut milk makes this a great alternative to muesli bars that are often high in refined sugar. Pop a couple  into the kids lunchboxes for a healthy sweet treat or grab one when your energy takes a dive in the afternoon for pick-me-up without the heavy added sugar load.

Amazing Amazeballs

200g medjool dates (stones removed)

100g natural almonds

2/3 cup desiccated coconut

1 tsp ground cinnamon

1/3 cup coconut milk

20g 70% cocoa dark chocolate, finely grated

cocoa powder

sesame seeds

extra desiccated coconut

Method

Put the dates (don’t forget to remove stones) and almonds into a food processor and grind until they are in small pieces, but not pulped.

Add the desiccated coconut, cinnamon, grated chocolate and coconut milk, then pulse until the mix becomes sticky and pliable.

Roll mixture into small balls and coat in either powdered cocoa, sesame seeds or desiccated coconut.
