Three round kumara and halloumi fritters on a plate with decorative salad

This delicious, lightly spiced fritter recipe was inspired by Nadia Lim who is a co-founder and nutritionist at My Food Bag. For this recipe I removed the eggs and used aquafaba instead. I’ve included both egg and egg free options in the recipe.

When using an egg replacer you tend to get a flatter fritter, however, using whipped aquafaba helps the fritter to maintain shape.

The kumara and firmness of the halloumi also help to get a good shaped fritter – and they taste great!

Kumara and Halloumi Fritters

2 eggs or egg replacer .. I used 6 Tbsp aquafaba

1/4 cup milk or oat milk

1/4 cup flour

1/4 tsp baking powder

1/4 tsp each powdered garlic, coriander, turmeric & garam masala

100g halloumi cheese, grated

150g kumara, grated

1/2 small brown onion diced

Method

In a large bowl, whisk the aquafaba until it makes peaks. (if using eggs whisk the eggs and if using another egg replacer whisk that), then the add milk or oat milk and the dry ingredients and stir well to combine.

Grate the halloumi and kumara and thinly slice the onion.

Squeeze the kumara firmly in a tea towel to remove as much liquid as possible. Then fold into fritter mix along with onion and halloumi, season with salt and pepper.

Heat oil in a pan and cook the fritters, I used about 1/4 cup per fritter but you can see what works best with the consistency of your fritter mix.

Serve fritters with a green salad and mango salsa.
