This week I have another eggless recipe to share. I’m really enjoying going through the recipes and still have a few to try. I’m not entirely sure that I made this one correctly as my cake came out more like a loaf, however it tasted great when toasted so I’m going to say it was still a success.

The recipe is made with two whole oranges, skin and all, broken up in a food processor (although not make into mush which is where I went wrong) the other ingredients are self raising flour, caster sugar and plant based spread or butter.

Please do let me know if you give this recipe a try and have better results than me, I’m going to try it again without over processing as the flavour was great and the recipe was so easy.

Karen’s Eggless Orange Loaf Cake

2 Oranges

175g Plant based spread or butter

1 cup Castor sugar

2 cups Self raising flour

Pre heat the oven to 180c. Put the oranges into a food processor until completely broken up (but not made into a mush), you can throw the whole orange in skin and all. Don’t over blend, just enough to brake up the oranges. Then add the rest of the ingredients and mix to combine.

Pour into a 20cm cake tin, or this recipe can be made into muffins. Bake at 180c for 45-50 minutes. It will be a little heavier than a cake that has eggs but is a great alternative.
