cleansing raw salad with herb dressing

I don’t know about you, but after a few weeks over-indulging I am enjoying starting the new year with some light and healthy meals. Here’s one from nutritionist Natalie Brady that is delicious and simple to make.

“This cleansing raw salad with herb dressing is a great recipe to make during meal prep on a Sunday. It keeps well in the fridge for 2-3 days. Raw colourful salads are a fantastic way to increase the nutrient density of your diet, especially when you add fresh herbs. Herbs are extremely cleansing and are loaded with antioxidants.” 

Cleansing Raw Salad with Herb Dressing

Serves 4 as a side

Ingredients

4 large handfuls of baby kale

1 carrot, thinly sliced (I use a julienne peeler)

½ red capsicum, finely sliced

½ large cucumber, chopped into half moons

¼ purple cabbage, finely sliced

½ cup parsley

¼ cup seeds (I use a mix of pumpkin & sunflower)

Herb Dressing

1/3 cup olive oil

½ cup herbs (I use a mix of coriander, basil & parsley)

1 tsp wholegrain mustard

1 garlic clove, peeled and chopped

Juice form ½ a lemon (or 1 lemon if it’s not that juicy)

Method

Add all salad ingredients (except for the seeds) onto a large plate.

Add all dressing ingredients together into a blender and blend until well combined.

Pour dressing over the salad, sprinkle seeds on top and enjoy!
