A few weeks back I posted a recipe for no bake cranberry slice that was not the healthiest if you are cutting down on sugar and saturated fat, I only eat a little at a time so I’m not overly concerned, however if you’d like something more substantial that tastes good (although not as nearly as sweet) and is healthy then this is the slice for you.

 Our good friend Anita is always testing out recipes and creating delicious healthy food that we are fortunate enough to get a sample of when she comes over to help us out. This is one of her latest creations and it’s now my favourite slice!  The banana, apple and oats make it perfect for breakfast on the run or a quick snack during the day when your energy gets low, there’s no refined sugar or added fat which makes this slice a much better option than regular muesli bars or muffins.

Here’s what you need

2 mashed bananas

2 cups rolled oats

2 grated peeled carrots

1 grated peeled & Cored Granny Smith apple

1 cup unsweetened applesauce

1/2 cup chopped peanuts

1/4 cup chia seeds

2 Tbs raw Manuka honey (Earthbound is great)

Here’s how to make it 

Grease a baking dish, around 23 x 13 cm in size. Turn on the over and preheat to 175 degrees C.

In a bowl the bananas, oats, carrots, apple, applesauce, peanuts and chia seeds together, once combined drizzle over the raw Manuka honey and stir again. Spread evenly over your baking dish.

Bake your slice in the over until golden brown, this should take around 20 mins.
