This flavoursome nutty bean soup is the perfect recipe to warm you up on a chilly day!

Easily prepared on the stovetop where it can simmer away until you are ready to eat, or try making it in a crockpot on low and cook for the day while you head into work.

African Bean Nut Soup

Serves 8

½ c water

400g tin tomatoes

2T soya sauce

400g tin chickpeas, drained (save the liquid for aquafaba)

1 med onion

3 c vegetable stock

2 small kumara

1/3c water

1 large carrot

3T peanut butter

1 stick celery

1t curry powder

1 red capsicum

½ cup finely chopped coriander or parsley

Method:

Heat 1/2 cup water, add soya sauce

Chop onion, peel and dice kumara, add to pot, cook 5mins.

Thinly slice carrot, celery and capsicum. Add to pot, cover and cook 3 mins.

Stir in canned tomatoes, chick peas and stock.

Blend peanut butter and curry powder with 1/3 cup water

Add to pot, stir well.

Cook until vegetables are tender.

Blend together if you like a creamier soup. Add cannellini beans and or black beans for a denser soup.

Serve topped with coriander, parsley or your favourite garnish.
